Coconut Sugar Cookies

Coconut Sugar Cookies are one of my all-time favorites and I get requests for this recipe all the time. My friend Stephanie said it was time I shared the recipe on the blog, so here you go.
 

These cookies are thin, crispy and buttery. They pretty much melt in your mouth. And if you love coconut half as much as I do, then you will definitely love them too. And they are super easy to make, always an added bonus!
 
 
Coconut Sugar Cookies
 
2 cups sugar
2 cups butter, softened
1 cup flaked coconut
1 teaspoon vanilla
3 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
extra sugar
 
Heat oven to 350 degrees. Beat 2 cups sugar, the butter, coconut and vanilla in large bowl with an electric mixer on medium speed. Stir in flour, baking soda and salt.
 
Shape dough by rounded teaspoonfuls into balls. Place 3 inches apart on ungreased cookie sheet. Press the bottom of a smooth glass into the cookie dough to grease, then dip in extra sugar and press on dough balls to flatten slightly. Bake 8 to 10 minutes or until edges begin to turn golden brown. Remove from cookie sheet and cool on wire rack. Makes about 8 dozen cookies. ... And no mistake, this recipe does not contain eggs. ...   17. I think you may have solved a mystery for me. I used to work at a hospital and my supervisor was an older woman originally from Sweden. She brought the most delicious cookies for us to share. She wouldn't give the recipe, but said that she would gladly make them for us...if we asked. She passed away and I have been trying to replicate her recipe. I'm going to try yours...it might be the one.
